Vegan chocolate can be hard to find and is often expensive. This is an easy 4 ingredient recipe that uses organic cocoa butter, which also has great health properties. You can also swap out the matcha for cocoa powder to make your own vegan chocolate. If you don't have any chocolate molds, ice trays are a great alternative - just ensure it's completely dry before using.
1 ½ cups of grated organic cocoa butter
2-4 Tbsp of maple syrup / organic coconut sugar (depending on how sweet you want it)
1 tsp of vanilla extract (optional)
1-2 tsp of matcha
You can replace matcha with 4 Tbsp of organic cocoa powder for a dark chocolate recipe.
1). Create a double boiler by adding water to a large pot and bring to a boil over medium heat. Place a heatproof glass bowl on top of the saucepan (ensuring that the water does not touch the bowl).
2). Add the grated cocoa butter to the bowl and let it melt. Then add the maple syrup and stir until dissolved.
3). Remove the bowl from the saucepan and then add the vanilla extract and matcha powder. Add in more matcha powder if you want a stronger flavour.
5). Stir until combined and pour into molds. If you don't have molds, ice trays make a great alternative or simply line a flat baking tray with baking paper and pour in the mixture.
4). Place in the refrigerator to set.
